Weekday meal times can be stressful in our house. We try to simplify meals and meal prep during the week. This means easy prep, less food items, fast cooking times, and most importantly little clean up. We even have started getting the kids involved with the prep and the clean up. Surprisingly they feel very accomplished to help clear that table, and nothing gets your kids to eat their meal better than having them help with the preparing.
This Thai Mango noodle salad is one of our new favourite meals. It can be made ahead and marinate in the fridge or enjoyed right away. We used local mangos (yes!! Local) from The Little Green Grocer. We have also made this without the noodles as a mango salad (also very delicious).
On less busy weeknights we like to pack up our dinner and head to one of Stratford Parks/ playgrounds for a picnic. One of Stratford’s great luxuries are the fabulous parks, one seemingly situated in every small neighbourhood, beautiful manicured and landscaped. One of our favourites is the lower Queens park/ playground located right off William St. along the river. We can play on the playground, walk over to the river and check out what the ducks and swans are up to, we usually end up bumping into daycare friends, and we have even been know to use one of the city BBQ’s. Its also a quick walk from our house which adds to the fun of going to the park.
